Restaurants: Ventura's grease (FOG) program

Ventura Water runs a fats, oils and grease control program for food service establishments, as state law requires. Key points from the city's FOG FAQ:

  • Classes: facilities are classed 1 to 4 by how much grease they produce. Full-service restaurants are Class 1; fast food is Class 2.
  • Grease control devices: new Class 1 and 2 facilities, and remodels that change operations or kitchen size, must install one. Existing facilities can be required to install one after a sewer blockage, chronic noncompliance or a failed device.
  • Connected fixtures: all grease-bearing drains connect to the device, including three-compartment and prep sinks, mop sinks, pre-rinse sinks and floor drains. Restroom lines must not.
  • Garbage disposals must be removed from existing facilities and can't be installed in new ones.
  • Plan review and inspections: new or modified facilities submit plans for FOG review, and FOG inspectors visit regularly.

We plumb grease interceptors and fixtures to the program's rules, jet kitchen lines between pump-outs, and give you service records for inspections. Full rules are on the city's Fats, Oils and Grease page.

Apartments, HOAs and commercial sewer laterals

The City of Ventura requires commercial and common-interest properties to inspect their private sewer laterals every 10 years, according to its private sewer lateral fact sheet. The inspection covers the line from the last private connection to the city main. We camera the laterals, complete the city's report, and price any repairs.

Commercial plumbing questions

Can you work after closing time?

Yes. We schedule commercial work at night or early in the morning so your business can stay open.

Do you offer maintenance contracts?

Yes. We set up maintenance contracts for scheduled line jetting, annual backflow tests and water heater service, so problems are caught before they close your doors.

Do you offer net-30 billing or certificates of insurance?

Do you pump grease interceptors?
